Tangerines are a specialty of Yakushima. We process small or damaged tangerines into juice.
麦味噌 ”barley miso”
Barley miso is a type of miso made by adding barley koji to soybeans, and it is mainly produced in the Kyushu, Chugoku, and Shikoku regions. We handcraft it using soybeans from Kyushu and domestically grown barley.
We send a boat out to the sea around Yakushima Island,
Draw seawater from offshore,
Then, we use firewood to slowly heat the seawater,
Over the course of several days,
And nurture the growth of salt crystals.
